     Abstract Abstract-Glutinous rice starch (GRS) is one of the important commercial cereal starches but there is some limitation in application due to lack of functional properties. Ball milling treatment is simple, cost effective and environmental friendly physical modification method because no chemical or biological agent is required. The aim of the study was to characterize the physicochemical properties of modified starches (MGRS) produced by ball milling method. The results show that cold water solubility, water retention capacity and swelling of MGRS are higher in than those of native starch. Degree of starch gelatinization study revealed that MGRS was completely gelatinized. In conclusion, the physicochemical properties of starch can be improved by ball milling method.
