     Abstract Houttuynia cordata Thunb., a medicinal herb and traditionally used to treat various diseases. H. cordata found in China, Korea, Japan, and Southeast Asia. In Thailand, H. cordata was fermented with probiotic bacteria to yield a H. cordata Thunb. fermentation product and widely used as a dietary supplement. However, the effect of H. cordata fermentation product in healthy adults has not been evaluated. In this study, we investigated safety and immunostimulant activity of H. cordata fermentation product in healthy adult volunteers. Before and after study was conducted to evaluate the safety and immunostimulant activity of H. cordata fermentation product in healthy adults. After 4 weeks of intervention of H. cordata fermentation product for safety assay, the results of blood chemistry and hematology of ten healthy volunteers showed no significant difference between before and after treatments. However, total cholesterol was decreased from 213.20 ± 8.95 to 203.10 ± 11.04 mg/dL but not significantly (p = 0.065). Meanwhile, LDL level showed a significant decrease (p = 0.02) from 133.10 ± 9.40 to 120.30 ± 11.20 after a 4-week intervention. Moreover, the volunteers have no major adverse event. The assessment for immunostimulant activity was conducted in healthy adults after we found the H. cordata fermentation product was safe. Thirty healthy adults fulfilling the criteria were enrolled in the study. The results showed the percentage of neutrophil was significantly increased from 53.63 ± 1.38 % to 56.61 ± 1.45 % and the mean of WBC was increased from 6.37 ± 0.31 x 109 cells/L to 6.61 ± 0.28 x 109 cells/L after the 8-week intervention. Moreover, the mean of CD4+ and CD8+T-cells was decreased but not significantly different between before and after treatments (706.83 ± 35.50 to 697.53 ± 24 and 614.33 ± 31.09 to 590.90 ± 35.75, respectively).While the ratio of CD4+ and CD8+ T-cells was increased but not significantly different (1.24 ± 0.089 to 1.29 ± 0.102). In conclusion, our results demonstrated that the H. cordata fermentation product was safe in healthy adults during the time of intervention and no major adverse event was observed. The H. cordata fermentation product may possess immunostimulant activity by enhancing the innate immunity.
