| บทคัดย่อ |
Tubtim-chumphae rice RD69 is a hybrid pigment rice between Jasmine rice 105 (Hom mali) and Sung Yod
rice. It contains high dietary fiber, polyphenols, and antioxidants. Tubtim-chumphae rice (TC rice) has been known as
a source of health benefits. Many functional ingredients, particularly phenolic compounds, may have bioactive
properties against pathogenic bacteria. The objective of this study was to study the antimicrobial activity of TC rice
bran extract against Escherichia coli TISTR073 and Staphylococcus aureus ATCC25923. The extractions of TC rice
bran using distilled water, and 80% ethanol were compared. The extracts showed total phenolic content of 73.11
mgGAE g extract-1
and 124.00 mgGAE g extract-1
, respectively. TC rice bran (TCRB) extracted by 80% ethanol was
prepared in powder form and rehydrated before testing. The result revealed that TCRB extracted powder did not exhibit
antibacterial activities against tested bacteria. In contrast, TCRB extracted solution showed clear antimicrobial
properties. This finding could be applied to various Tubtim-chumphae rice products. |
