บทคัดย่อ Background: Due to the increasing population of aging people in Thailand, their needs and health care problems, of great diversity due to a variety of life styles, requires close examination. Availability and accessibility of food affect the health and well-being of aging people in the community. Therefore, to enhance quality of life for the aging and their families, community nurses and health care personnel must understand the variety of foods that make up the diet of these people, in order to provide suitable and culturally acceptable care for the elderly. Methods: The study aims to explore the diverse diet of older people under social, economic, environmental, and cultural contexts in the northern region of Thailand. This is a foundation of a larger research project of community food management systems for care of older people. Critical ethnographic research was employed during the study. The data were collected from 41 primary elderly informants and their family members, who experienced food management for themselves. Results: Evidences from this research revealed nine groups of foods according to older people and families perspective. Community nurses and health care personnel should understand the diversity of diet and make themselves aware of cultural sensitivity toward what foods aging people need or prefer, in order to expand the area of services effectively and strengthen the community management for food. Conclusions: Needs and utilization of data in health problems, specifically regarding concerns of individual dietary diversity, can guide community nurses and health care personnel to provide and promote health care and care that will suit each individual or family. Therefore, community nurses and health care personnel have to aware of the diversity of diet for care of older people. This should include strengthening communities’ ability to participate in managing their own food needs, which is one of the social determinants of health, to sustain the availability of foods. This could improve quality of care in order to improve the well-being of aging members in the community.
