Abstract |
Hen egg white proteins (HEW) contain high amount of valuable proteins which are the main protein dietary source. To generate active peptides, the HEW was hydrolyzed by 0.25 M NaOH at 40 oC for 8 h. The biological activities including anti-angiotensin-converting enzyme (ACE), antioxidant and antimicrobial activities were investigated. Degree of hydrolysate was observed to be 81.12%. Besides the biological activities, the hydrolyzed HEW (hHEW) exhibited antioxidant activity with the highest percentage inhibition of ABTS radical (56.20%) and also displayed inhibitory effect to the growth of Bacillus subtilis and Escherichia coli. Interestingly, hHEW revealed ACE inhibitory activity (50.61%). Moreover, hHEW could resist to gastrointestinal digestion. Furthermore, hHEW did not exhibit cytotoxic effect toward human red blood cells. In terms of storage, stabilities of the biological properties were also crucial factors for indicating the quality of hydrolysate. Thus, hHEW powder was packed in the aluminum foil and the plastic zipper bags, and then kept at both 4 oC and room temperature for 6 months. During long-term storage, hHEW powders kept in aluminum foil bag at 4 oC were judged for the best condition with minimum changes in the antioxidant, antimicrobial and anti ACE inhibitory activity. |
