Abstract |
The degradation of inulin from Jerusalem artichoke tuber upon the thermal treatment was studied. Thermal treatment was performed in an oven at various temperatures (50, 70 and 90 oC) and times (5, 10 and 15 hr). The tuber weight loss and content of inulin along with inulin pattern were monitored. Inulin contents and inulin pattern were detected using high performance anion exchange chromatography coupled with pulsed amperometric detection (HPAEC-PAD). Heat treatment could eliminate most of water from the tubers. The contents of inulin obtained from various treatment conditions were insignificantly different. The degradation of inulin to low oligomer was directly related to the temperature of the heat treatment. |
