     Abstract Inulin is carbohydrate which is found mainly in tuber of Jerusalem artichoke. It has been used as prebiotic and soluble fiber macronutrient substitute in dietetic foods for diabetic patients. Since inulin is a highly water-soluble carbohydrate, therefore it can be easily extracted from Jerusalem artichoke tuber by hot water. The water extracts obtained are usually contained other compounds besides inulin such as phenolic compounds. The phenolic compounds undergo enzymatic browning reaction by polyphenoloxidase (PPO), resulting in an undesirable brown colored extract. This work is aimed to investigate the strategies for decolorisation of the inulin extract.
